One-Pot Chicken and Rice with Vegetables

This easy one-pot chicken and rice recipe is a complete meal in itself, with tender chicken, flavorful vegetables, and fluffy rice all cooked together in one pot. It's a delicious and convenient dinner option that is sure to become a family favorite.


  • 1 tablespoon olive oil
  • 4 chicken breasts, diced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 carrot, peeled and diced
  • 1 cup uncooked white rice
  • 1 (14.5-ounce) can diced tomatoes
  • 2 cups chicken broth
  • Chili powder, cumin, and salt, to taste


  1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the diced chicken and cook until browned, about 5 minutes.
  2. Add the onion, garlic, bell pepper, and carrot to the pot and cook for an additional 5 minutes, or until the vegetables are softened.
  3. Stir in the uncooked rice, canned diced tomatoes, and chicken broth. Bring to a boil, then reduce the heat to low, cover, and simmer until the rice is cooked and the chicken is tender, about 20 minutes.
